SPICY MEXICAN BEEF

You can totally control the heat of this dish with the amount of chili powder and hot pepper sauce you use. We don’t like a lot of heat at our house so the heat level on this, as written, is moderate. This is the perfect addition to a taco bar and would make delicious enchiladas, burritos and quesadillas for your Cinco de Mayo celebration.

SERVES 8

1 (4- to 5-lb [2- to 2.5-kg]) chuck roast

Salt and pepper to taste

1 cup (151 g) chopped onion

1 (4.5-oz [127-g]) can green chilies

1 cup (237 ml) beef broth

1 (14.5-oz [411-g]) can diced tomatoes

1 tsp garlic salt

1½ tsp (4 g) cumin

1 tsp Mexican oregano

1 tsp chili powder

¼ cup (60 ml) hot sauce (I prefer Tapatio brand)
